Lanchinho nutritivo e super fácil: o muffin de abobrinha!

Receitas que saiam do comum, mas que não deixam de ser completas são uma mão na roda
para os dia a dia desde a introdução alimentar. E, para ajudar, separei uma receita mega fácil,
pá-pum e que toda família pode comer.
Além de prática, ela é nutritiva, vegetariana e faz sucesso entre a criançada.

Muffin de abobrinha, ervilha e grão de bico:
Ingredientes:
 1 ovo;
2 colheres de sopa de azeite (faz o sabor ficar mais gostoso, mas pode usar óleo);
1 xícara de farinha de aveia (pode ser trigo);
1 xícara de abobrinha crua ralada;
4 colheres de sopa de ervilha bolinha e 4 colheres de sopa de grão de bico, ambos cozidos;
½ xícara de caldo de vegetais ou água ou leite vegetal;
1 colher de sobremesa de linhaça (opcional);
Salsinha a gosto;
Pitada de sal (para maiores de 1 ano);
Açafrão em pó;
1 colher de sobremesa de fermento;

Modo de preparo:
Misture todos os ingredientes começando pelos líquidos e deixando a farinha por último, pois
você pode precisar de menos farinha. A massa fica mais “consistente”, mas depois de assado
fica super fofinho. Coloque em forminhas de cupcake e leve ao forno pré aquecido, 180° por
mais ou menos 20-30 minutos ou até o palito sair limpo.
Você pode acrescentar mais temperinhos de sua preferência e, se consumir queijo, uma
salpicada de queijo ralado por cima. Super combina com o sabor dos vegetais.

Esta receita pode ser congelada depois de pronta e dura no freezer até 3 meses. Pode ser feita
em assadeira inteira também, mas a massa não rende muito, então, prefira uma assadeira
pequena.

O muffin pode ser oferecido nas refeições principais ou nos lanches, lancheira e até mesmo em
um pic-nic no parque, que tal?
